Surviving Beef Eating Countries

Uruguay is known for its spectacular beef, but as someone who does not eat red meat, the benefits are lost on me. On the other hand, it is possible to survive Uruguay, even as a total vegetarian!

Missing Colorado

When we chose Uruguay, we chose a location that provided the same fascination as Colorado, albeit at a lower altitude. Good thing it’s Carnival time in South America. Otherwise, I would really be missing Vail!
